Fat Cat Lasagna
6-8 good size servings

Ingredients
- 1 lb. ground beef
- 1/2 lb. ground sausage
- 1 medium onion diced
1 clove garlic
- 2 T. parsley (1 T. dried)
- 2 T. basil (1 T. dried)
- 6 roma tomatoes diced (1 16oz. can, undrained)
- 2 6 oz. cans tomato paste
3 eggs beaten
- 2 12 oz. cottage cheese or ricotta cheese
- 1 cup grated Parmesan cheese
- 1-2 lbs. shredded mozzarella cheese
- 1/2 lb. (16 oz. box) lasagna noodles
- 1/2 t. pepper
Method
- Cook beef, sausage and onion until browned, stirring to
crumble; drain. Add garlic, spices, tomatoes and tomato
paste.
- Simmer 15 minutes or until thick,stirring occasionally.
Cook lasagna noodles according to package. Drain well.
Combine eggs, cottage or ricotta cheese, pepper, and
Parmesan cheese, combine well.
- Spread about 1/2 cup meat sauce in a greased 13 x 9 x 2
baking dish (cake pan)layer half of each: noodles, cottage
cheese mixture, mozzarella cheese, and meat sauce. Repeat
layers, ending with meat suace. (Save enough mozzarella
cheese for top layer).
- Cover and bake at 350 for 30 minutes. Uncover, add the
mozzarella cheese, bake 10 minutes to melt cheese. Let
stand 10 minutes.
GARFIELD'S HINT OF THE DAY:
When cutting the lasagna, first take a pair of sissors,
cut the top layer of cheese making sure your servings are
equal. Then follow the lines with a knife, cutting the rest
of the way through.
