Sweet & Sour Mango Salsa
Makes 1 1/2 cups
Cherry tomatoes and mango cubes are dressed in a sweet and sour ketchup-based sauce. For an even sweeter note, use grape tomatoes instead of cherry tomatoes.

Ingredients
- 1 mango (1 pound), cut into 1/4" cubes
- 1/2 cup halved cherry tomatoes
- 2 TB thinly sliced scallions
- 1 TB fresh lime juice
- 11/2 tsp ketchup
- 11/2 tsp honey
- 1/2 tsp chili powder
Method
- In medium bowl, combine mango, cherry tomatoes, scallions, lime juice, ketchup, honey, and chili powder. Stir to combine.
- Refrigerate until serving time.
